DID YOU KNOW - SUSHI CAMES FROM CHINA?
You may be surprised to learn that sushi actually developed from the rice fields of China hundreds of years ago - even though we now think of Japan as the sushi capital of the world and Japan is certainly responsible for introducing it to the western world. The original sushi dish was called Narezushi which basically fermented rice and salted fish and the whole purpose was not for the flavour but to preserve the ingredients at a time where there was no refrigeration to prevent bacterial growth and to keep food fresh for longer. Typically the rice was very rarely eaten - it was used solely to wrap and preserve the fish.
Sushi was introduced to Japan in the 8th century. Over time it began to change and the Japanese introduced vinegar to ferment the rice more quickly after it was boiled.
By the 18th century, sushi restaurants started to open all over Japan. At this time, a small slice of fish could be placed on top of the rice to create a delicious bite-size snack which was portable, affordable and filling, making a great lunchtime snack. The modern day sushi was born.
